Moong and moong sprouts is used as an ingredient in both savoury and sweet dishes.
Moong beans are commonly used in cuisins across Asia.
Moong beans are germinated by leaving them in water, usually called as "bean sprouts".
Sprouts: wash and rinse moong until the water runs clear. It removes any mites,soil,toxins,that the beans come from. Add water and cover bowl with lid.It takes 4 to 6 hour to soak moong properly. Strain water from soaked moong completely and keep aside for a day . It takes a day in summer to get sprout and 2 to 3 days in winter..Simply keep sprouts in zip lock, seal it properly and store in a freezer.
Recipes from whole green moong:
Punjabi MasalaMoong
1/2cup whole moong soaked in water for 2 hours
2tablesppon oil
1medium onion
1or 2 tejpatta
1/2teaspoon cuminseed
1tomato finelychopped
1teaspoon ginger,garlic,paste
1/4teaspoon turmeric
1teaspoonredchilly powder
1/2 teaspoon dhaniya powder
1teaspoon garammasala powder
Salt to taste
For tempering
1 teaspoon oil
1/2 teaspoon cumin seeds
1/4 teaspoon redchilly powder
How to proceed:
Heat oil in a cooker.Add cuminseeds and tejpatta. When splutter add onion and saute fir 2 minutes. Add ginger garlic paste and saute for 1 minute.
Add tomato and mix well till tomatos soften and oil release.
Drain and add moong and mix well. Add 2 cup water, cover lid of a cooker and pressure cook for 10 to 15 minutes or for 8 to 10 whistle. Let it cool. Open the lid of a cooker, stir with spoon.if it is dry add water to get proper considtency. Now heat oil in a pan, add cumin seeds and pinch of a hing, once splutter add redchilly powder and remove from flame. Add this tadka on moong prepared Garnish with dhaniya Serve with roti and rice.

Drain water from soaked moong. Add
4 cups of water and moong in pressure
Cooker and cook for 4 whistle

Mix water and moong with blender.Heat ghee in a pan and add cuminseeds,when crackle add curry leaves,ginger, hing and saute on a slow flame for a few minute. Add the cooked moong along with water and salt. Bring to a boil. Add lemon juice and pepper powder. Add coriander, serve hot.

2cups sprouted moong
2tablespoon oil
1 grated onion
1/4teaspoon turmeric
1 tablespoon dhaniya powder
1 teaspoon redchilly powder
1 tomato finely chopped
2 tablespoon tomato puree
1/2cup milk with cream
Salt to taste
Pinch of sugar
Paste 1tablespoon cashew soaked
1 teaspoon khuskhus soaked
1 or to elaichi

Add water, soaked cashew,soaked khus khus,ginger garlic paste and one eliachi and prepare paste.

kadhi batter. Heat ghee in broad pan and add rai, cuminseeds, methi dana,hing, whole red chilly and saute for a half minute.Add onion and saute for 2 minute.Add ginger garlic paste and cook for a minute. Add kadhi mix.
Let it boil and add sprouts mix well.while serving add tomato sauce and chaat masala, garnish with coriander.
Khatta moong
1 cup boiled moong
1 tablespoon oil
1 teaspoon ginger garlic paste
2 cup curd somewhat sour
1 tablespoon besan
2 cup water
1/2 teaspoon rai
1/2 teaspoon cuminseed
1 teaspoon redchilly powder
1/4 teaspoon turmeric powder
4to 5 curry patta
Pinch of hing
1 tablespoon chopped coriander
Pinch of sugar.
How to proceed:
Make kadhi batter. Heat oil in a broad
pan add rai, cuminseed,hing, curry patta, ginger garlic paste and cook for a minute. Add kadhi batter, salt, red chilly powder, turmeric powder and
let it boil. Add boiled moong and again boiled for 2 to 3 minutes and stir well so kadhi batter and moong mix properly .Add pinch of sugar as kadhi
batter is sour.Garnish with coriander.
Sprouted moong sabji:
It is a dry sabji but you can add proper
water to make curry like recipe
1cup boil sprouted moong
1/2 cup boil carrot, green peas,french beans
1 onion finely chopped
1teaspoon capsicum chopped
1 tomato finely chopped
1/2 teaspoon ginger garlic paste
1 tablespoon oil
1/2 teaspoon redchilly
1/4 teaspoon turmeric powder
2 teaspoon dhaniya powder
salt to taste
1 teaspoon boiled corn
1/2teaspoon chaat masala
How to proceed
Heat oil in a pan. Add rai, cummin seeds, hing and stir for a while. Add
Onion saute for a minute. Add ginger
garluc paste and capsicum. Cook for
3 to 4 minute to soften capsicum. Add
tomato piece and stir for 3 minutes.
Add all masala mix well. Add boiled
carrot, peas, french beans, moong and
mix properly Add salt and and chaat
masala Add boiled corn. Mix properly
Garnish with coriander.
Simple moong sabji with curd:
It is dry sabji for sumner.
1 cup boiled moong or boiled sprouted moong
1 tablespoon oil
1/2 teaspoon jeera
1 tablesppon ginger green chilly paste
1/4 teaspoon redchilly powder
1/4 teaspoon turneric
1 teaspoon dhaniyajeera powder
salt to taste
pinch of sugar
1or to 2 tablespoon curd but not sour.
Chopped coriander
How to proceed:
Heat oil in a pan. Add cummin seeds
when crackle add hing and ginger and
greenchilly paste. Stir for a second. Add boiled moong, all masala and stir
well.Add salt and pinch of sugar .while
serving add curd and coriander serve
with hot roti.
