One pot meal

There are lots of people nowadays living far from house.When you get live to alone,you may love and learn to cook.
Eating home made food is usually much cheaper than eating outside or to buy processed food packets.Having to prepare your own food could really be more exciting as well as gratifying on your part,too.One pot meals is best option for weekend meals.Handy and quick.

Everything cooks in one pot or pan,balanced meal that consists of dietary fibre,water and nutrients.
These easy dinner recipes provides protein,vegetables,and grains.
A one pot meal need not require hour and hours of cooking.This type of preparations is especially desirable for busy people.With your easy one pot meal,it could give you best quality food for good health.
Many cultures have their version of the one pot meal.Though the one pot meal is somewhat the same in every corner of India,the method preparation varies from place to place depending upon local ingredients available.Rice is a staple grain in most Indian house.With so many varieties easily available in the markets,each unique in smell and flavour,it is a great ingredient to play around with in the kitchen to create lip smacking recipes.
It is consumed in so many forms. Steamed rice is the most common form of consumption and eaten with dal and curry.
                                    
There are lot of rice recipes like biryani,khichdi any many more.
These quick and easy one dish meals are simple enough for week night dinner.
For a complete meal,you can pair them with some pickle,curd,buttermilk,raita.

MUJADARA.Mujadara is a popular dish throughout the Arab world,and is generally
made using brown or green lentils and rice.It is topped with fried onions and served with
curd.This is very similar toMasoor dal khichdi.We can make Majudara with brown rice.
Soak brown rice in hot water about 2 to 3 hours.

Ingredients
1/2 cup rice long grain rice
1/2 cup whole masoor dal
1/2 tbsp oil
1/2  tbsp jeera
salt to taste
2to 3 cloves
For topping
1 tsp oil
2 onion
Pinch of salt
1/4 tsp jeera powder

Method
Peel and slice thin onion.
In a small pan heat 1 tsp oil.
Add and roast onion on a
medium flame.As it starts browning
add pinch of salt and jeera powder
powder.Keep aside.
Heat oil in a pressure cooker.
Add jeera and cloves.
Add dal and rice.
Saute for a minute.
Add 1 1/2 cup of water.
Add salt and mix well.
Cook for 2 whistle.
Open when the pressure released.
Serve hot topped with roasted
brown onion. Serve with curd.

       
 MASALA BHAT.  This is Maharashtrian  one pot recipe made using basmati rice and fresh veggies with Indian spices.Masala Bhat is made especially for festivals such as Ganesh Chaturthi and is also part of wedding feasts.Often served with cooling yogurt side dish.

ingredients
1/4 cup tendli
1 cup rice soaked
1/4 cup brinjal
Small onion chopped
1 green chilli finely chopped
1/4 tsp grated ginger
1/4 cup green peas
1/4 tsp jeera
1/4 tsp turmeric powder
Salt to taste.
1tbsp Goda masala
2tbsp oil

Method
Heat oil in pressure cooker.
Add jeera,pinch of hing and ginger.
Add green chillies,tendli,brinjal and
green peas.Stir well.
Add salt and 2tbsp water.
Cook vegetables on slowflame for 10 minutes.
Stir occasionally.
Add soaked and drained rice and Goda masala.
Again keep flame slow.
Add 1 1/4 cup water.
Bring the rice to a boil without a lid.
Cover the lid and cook  for 2 whistle.
Let it cool down .Garnish with coriander

KHICHDI.Khichdi is also a favourite comfort food,owing to the convenience of being able to cook in single simmering pot.
Most commonly eaten all over India.
Khichdi is an easy to digest and quick to make healthy Indian food.
Every region has its own version of the humble khichdi.The basic version is usually made with white rice,yellow,green or split moong dal and topped with ghee.

             
According to historian Mohsina Mukadam,khichdi is"one of the most ancient foods in India,yet one that has hardly changed."

LOW CALORIE KHICHDI.

3/4 cup rice soaked
1/4 cup Moong dal soaked
1/2 tbsp ghee
1/4 tsp turmeric powder
Pinch of hing.
1/4 tsp grated ginger
1/4 cup green peas
1 carrot grated
Salt to taste.
Pepper powder to taste
Water 300 ml

Method.
Heat ghee in pressure cooker.
Add pinch of hing.
Add drained dal and rice,
 grated carrot,green peas
and grated ginger.
Mix well.
Add turmeric powder and salt.
Mix and add 300 ml water.
Cook on slow flame for 10 minutes.
Stir occasionally.
Again stir and mesh well.
Add pepper powder and 1/2 cup water.
Cover the lid. Cook  for 2 whistle.
Let it cool.
Sprinkle pepper powder and serve with Butter milk or kadhi.
                                       

VEGETABLE KHICHDI  
Khichdi nation's favourite food.Easy to cook, hassel free,simple  and tasty.A number of varieties of khichdi are served across the country.
This khichdi is made in Swaminarayan Temple of Gujarat. There is no onion no garlic.we can add
leafy vegetable like spinach and methi bhaji.
Veggies are cooked separately.While mashing the rice and dal ,the veggies also will get up mashed,lose their
shape,size and colour.

Ingredients
1 cup rice soaked
1/4 cup tuvar dal soaked
1/4 cup moongdal soaked
1 clove
small stick of cinammon
1Bay leaves
pinch of turmeric powder
salt to taste
1 tbsp ghee
Vegetables for khichdi
1 potato cut into small pieces
1 small tomato chopped
1/2 cup mix vegetables like peas,carrot,capsicum,cabbage,
cauliflower,bottlegourd,brinjal,
Tendali, French beans.
1 tsp ginger green chilli paste
1/4 cup peanuts
1 tsp rai
1tsp jeera
1 tsp turmeric powder
1 tsp redchilli powder
1 tsp coriander powder
salt to taste

Method
Clean rice and dal.Soak separately.
Heat ghee in a broad pan and add rai.When crackle add jeera
Add ginger chilli paste,turmeric powder, red chilli powder and stir well
Add potato and all vegetables. Mix properly.
Add pinch of salt and cook for 2 minutes on medium flame.keep aside.
In a pressure cooker heat ghee and pinch of hing.
Add cloves,cinammon,bay leaves and stir for a while
Add soaked and drain tuverdal and
moong dal.Stir  for a minute on slow flame.
Add turmeric powder and salt to taste.
Add half cup of water.Cover the lid.
Cook on a slow flame for 15 minutes.
Add rice,peanuts.cooked vegetables and mix well
Add chilli powder,pinch of turmeric powder  and coriander powder.
Stir well.Add 4 cups of warm water.
Bring the rice to a boil without lid.
Cover the lid and cook for 3 whistle.
Let it cool.Garnish with coariander leaves.
               
             
             

SPICY TUVER DAL KHICHDI.
Tuver dal or pigeon pea khichdi is a mixtures of rice and dal,cooked together in spices.
Tuvar dal khichdi from Gujarat is an everyday food eaten with kadhi,pickles and papad.
It is also served with buttermilk.

1/2 cup Tuver dal
1/2  cup rice
1 small onion chopped
1 tomato chopped
1/4 tsp ginger greenchill paste
1/2 tsp garlic grated
1/8 tsp turmeric powder
1/8 redchilli powder
1/4 tsp dhania jeera powder
1 tsp garam masala
Pinch of hing
2 tsp oil
1/4 rai
1/4 tsp jeera
Small piece of cinnamon
1 clove
1tsp peanuts
Salt to taste.
Methia masala to taste.
For servig butter .
Or oil from sour pickles available at home

Method
Soak dal for 20 minutes
Soak rice for 20 minutes.
Drain dal and rice.
Heat oil in pressure cooker.
Add cinammon,cloves.
Add rai. When crackle add jeera.
Add hing and peanuts.
Saute for 2 to 3minutes.
Add onion and stir well.
Let the onion soften exactly.
Add tomatoes and saute for 2 minutes.
Add ginger chilli paste.
Add tuver dal turmeric powder
dhania jeera powder and garam masala.
Mix well and add rice and 2 cups of water.
Add salt and grated garlic.
Mix thoroughly.
Cover the lid
pressure cook for 3 to 4 whistle.
Let it cool.
Add butter while serve.
Sprinkle methia masala.
Methia masala is achar masala.
            Or
Pour the pickle oil and serve with curd.





BROKENWHEAT KHICHADI.Broken wheat known as dalia and lapsi in gujarati.Dalia is made from a special whole wheat and has high nutritional values including fibre that comes from the husk of the wheat.There are 3 types of broken wheat.Large size is used for salads and stuffing.Medium size is used for upma.Fine sized is used for kheer and lapsi.Its best to buy medium sized broken wheat.
Broken wheat is great substitute for white rice and good for diabetics.

1 cup moong dal
3/4 cup brokenwheat
1 tbsp ghee
1/2 cup potato chopped
1/2 cup green peas
1/2 cup cauliflower chopped

1/4 cup grated bottle gourd
1 tbsp ginger chilli paste
1/4 tsp pepper
1/2 tsp turmeric powder
1/2 tsp red chilli powder
1 piece of cinnamom
2 cloves
1 tsp jeera
pinch of hing
Salt to taste.
4 cup water

METHOD
Soak moong dal and broken wheat separately for 20 to 25 minutes.
Boil 4 cup of water
Drain water from dal and broken wheat.
Heat ghee in pressure cooker.
Add cinnamon,cloves,jeera and pinch of hing.Add all vegetables and mix well.
Stir for 5 to 7 minutes on slow flame
Add all masala and mix well.
Add salt.
Add Dal and broken wheat.Mix gently.
Add boiled water and mix well.
Pressure cook for 4 whistle.
When pressure cooker settled down
open the lid.
Check the consistency of khichdi.
If necessary,add warm water.
Garnish with coriander leaves.
Serve with mango pickles.
                                                             

OATS KHICHADI.Oats is nutrient-rich food  associated with low blood cholesterol when
consumed regularly.Oatmeal is chiefly eaten as porridge,and commonly eaten for
breakfast as oatmeal,which is made by boiling oats in water or milk.
Oats khichadi is Indian style oats porridge packed with veggies and dal.

1/2cup yellow moong dal
1 cup whole oats/rolled oats/instant oats/steel cut oats
1/4 cup finely chopped onion
small tomato chopped
1/2 cup chopped spinach
1 small carrot chopped
1/2 tsp turmeric powder
1/4 tsp redchilli powder
salt to taste
3 cup of water.

METHOD
Wash and soak dal.
Heat ghee in pressure cooker.
Add jeera,hing .When crackle add onion.
Saute for 3 minutes on medium flame
Add tomato,spinach,and stir well
Saute for 2 minutes.
Add drained dal and stir well.
Add oats,all spices, and salt.Mix well.
Add 3 cup of water
Mix well and cover the lid.
Cook Khichdi on medium flame for 3 whistle.
Dal has to cook completely.
Let the steam release naturally from the cooker.
Add 1 tsp ghee and serve.

       

TEHRI RICE Tehri is Awadhi cusine like masala bhat of Maharashtr, Pongal rice of Tamilnadu and biryani of Hyderabad.Tehri is mildly spicy and flavourful.
In Kashmir,Tehari is famous street food.
Making veg Tehri doesn't take much time.
It is one pot dish of North India.

2 cup vegetables stocks/water
2 tbsp curd
2 tbsp oil
2 potatoes
1 onion
1 carrot chopped
1 cup cauliflower chopped
5 to 6 french beans chopped
1/4 cup green peas
2 bay leaves.
1 cinnamon stick
4 cloves
2to 3 peppecorn
4 to 5 green cardamoms
1 black cardamoms
1 tsp grated ginger
1 tsp garlic finely chopped
2 green chillies finely chopped
1/2 tsp redchilli powder
2 tsp dhania jeera powder
1 tsp Turmeric powder
pinch of hing
salt to taste

Method
Heat oil in a pan.Fry potatoes till golden brown.Keep aside.
Heat oil in a pressure cooker..
Add Bay leaves, cinnamon,black pepper,cloves.
Stir for a while.Add hing.
Add black and green cardamoms.
Saute for 3 minutes on slow flame.
Add onion.Add ginger,garlic and green chillies.Stir for 3 miutes.
Add dhaniajeera powder,turmeric powder,red chilli powder.
Add salt.Add all vegetables and fried potatoes.Mix well.
Let it cook for 5 minutes
Add curd and rice. Mix gently.
Add vegetablestock/water and mix thoroughly.
Pressure cook for 2 to 3 whistle.
Let it cool.Garnish with coriander leaves.


TENDALI BHAT is spicy and tasty ivy gourd recipe from Maharashtrian cuisine.
Tendali bhat is lip smacking assortment of rice and tendali cooked along with Goda masala.Goda masala  known as kala masala is Maharashtrian spice mixture.This spice masala makes it easy to prepare Maharashtrian recipes like usal varan,masala bhat.

1/4 tsp redchilli powder
1/2 tbsp Goda masala
1/4 cup grated coconut
1tbsp ghee
Salt to taste.

Method
Heat ghee in pressure cooker.
Add rai,when crackle add jeera,
cardamom,cloves, cinnamon,
Fenugreek seeds,curry leaves,
Green chilli and hing.
Saute for a few seconds.
Add tendali and stir for 2
minutes.Add turmeric powder,
Red chilli powder,half of
Goda masala and salt.
Mix well and saute for 2 minutes
on slowflame.
Add rice and mix gently.
Add 1 1/2 cup of water and mix.
Bring the rice to a boil.
stir continuously.
Add remaining Goda masala and
grated coconut.Cover the lid.
Cook for 2 whistle.
When pressure cooker settled down
open the lid.

Keep slow flame.
Add onion and saute for 3to 5 minutes.

Add green chilli.stir for a minute.
Add carrot,french beans, cauliflower,
and green peas.
Add salt and mix properly.
Saute for 2 to 3 minutes.
Add brown rice and mix well.
Add 2 cups of water.Cover and cook
on slow flame for 10 minutes.
 Cover the lid of cooker.
Pressure cook for 4 whistle.
Garnish with coriander leaves and mint
